Waffles

So the other day at a very early 6:30 James comes scampering into our room saying, "Mommy, yoo hoo, mommy, waffles." I about died laughing. We don't make waffles that often and never on weekdays, but he was determined to have waffles. And he was just so stinking cute, how could I not jump (more like roll) myself out of bed to make the kid waffles. He ended up eating two or three whole waffles all by himself that day. 

This is from Easter Sunday when we made rolls for a dinner. He loves eating the dough by the handfuls, but this recipe has eggs in it so I had to think of a way to distract him. 

So I had him spread the butter on them. He's a pretty awesome little helper when he has a task to do. Trying to keep the rolls on the pan without little hands grabbing for them is an entirely different story, but I'll take that battle any day if it means this kid grows up liking to be in the kitchen with me. 

Easter Sunday was beautiful. We went to a friend's house for dinner and they had an Easter egg hunt afterwards. James was more excited about opening the eggs to see what was inside rather than hunting for them, but it was fun to watch everyone get involved to try and help him find more eggs.
