So the blog is refusing to upload any more pictures for today. I had a bunch more cute ones, but I suppose they'll have to wait. Sorry :( However I do have a yummy recipe to share. I had to make my own hamburger buns for our sloppy joes the other night and they were soooooo good. They were soft and light just like a bun should be. I don't think I am ever going to buy store bought ones again because these were so easy and they are so much better for you.They do take a little time because you have to wait for them to rise, but the actual hands on time is minimal. The recipe came out of a food storage cookbook so that's why you see powdered egg or powdered shortening options. I used powdered egg and regular oil and I didn't do the egg wash or add sesame/poppy seeds.
Hamburger or Hot Dog Buns
8 c. whole-wheat flour
2 T. yeast
2 T. dough enhancer (optional but does make a nicer bread)
1 T. salt
2 c. warm water
3/4 c. oil, or 3/8 c. shortening powder and 3/8 c. water
1/4 c. honey
3 eggs, or 3 T. powdered egg and 7 1/2 T. water
1 egg mixed with 1 T. water to make a wash, or 1 T. powdered egg and 2 1/2 T. water mixed together
sesame seeds or poppy seeds
In a large mixing bowl combine 4 cups whole-wheat flour and all the rest of the dry ingredients. Combine the water (warm), honey and oil if used instead of shortening powder. Add to the dry ingredients. Beat at low speed with a mixer for 1/2 a minute. Beat at high speed for 3 more minutes. Stir in up to 4 cups more whole-wheat flour to make a soft dough. Knead for 10 minutes. Cover and let rise till double. Punch down, and divide into 3 portions. Cover and let rest 5 minutes. Divide each portion into 8 balls. Press each ball into 3 1/2" circle for hamburger buns or into a rectangle for hot dog buns. Place on a greased baking sheet. Brush with egg wash or the powdered egg and water mix. Sprinkle with seeds if desired. Let rise until double. Bake at 375 for 10 minutes.
